Recently, the guys from Reiza Studios left us a video where we can compare the changes in lines and handling in general before and after the latest physics changes.
In the video, we can see an AMG GT3 driving around the Nürburgring in the same conditions. But on the left side we can see how the car responded before the changes and on the right side after the changes.
On the right side is the new differential model. Both cars have the graph of the rear wheel speed. Every time the graph gets brighter/splits into 2 lines, the rear wheel speeds go differently.
On the left side, the differential already does something, but not enough and too late/abruptly. On the right side you see that it even unlocks and the wheel speeds are differentiated, when the throttle is lifted (like in T2 or Schumacher S, for example).

Its has improved massively. Still lots of room for improvement though but I am dedicating alot more time to this sim after the update.
